My mother-in-law makes terrific pancakes. There is a belief among some of the family members that she is keeping her recipe a secret. We've all asked for it and she has willingly given it to us but no matter how carefully we follow her instructions, none of us can make them like she does.
I finally broke down and started using another recipe that comes pretty close to Nana's pancakes. And since we love pancakes at our house and I never manage my morning time as well as I should, I've started pre-packaging the dry ingredients for quicker meal-prep. Why didn't I think of this sooner?
I simply pour the dry ingredients from their bag into the sifter, sift and mix in the remaining ingredients. It doesn't get much easier than that. And, to top it off, we all enjoy a filling and delicious breakfast together before Daddy heads off to work.
Light + Fluffy Pancakes
1 1/2 cup flour
3 tsp baking powder
2 heaping Tbsp sugar
1/2 tsp salt
Sift dry ingredients together. Make a well and add:
1 1/2 cup milk
1 egg, lightly beaten
2 Tbsp oil or melted butter
1 tsp vanilla
Mix well.
Makes about 8 pancakes.

That's a great idea. I should use that since mornings around here are crazy!!
When I make waffles, I always make extra and then freeze them so on crazy mornings, I just pop one in the toaster. Saves a ton of time ;)
