quick + easy dinner






I am not a cook. Well, I'm not a great cook, so I love a quick and easy weeknight dinner. This recipe is one I've relied on for years when the busy wife and mother in me just can't handle a fancy multi-dish dinner. (Yes, more than one dirty dish equals a fancy meal.) I originally found it in a Kraft Food + Family magazine and I think you can still find a similar recipe on their website. Either way, if you're looking for something simple yet tasty to add to your recipe box, give this one a try.

Beef Noodle Bowl

1/2 lb linguine
1 -2 cups broccoli florets
3 carrots, peeled and sliced
2 tsp vegetable oil
1 lb beef sirloin steak, *cut into thin strips
1/4 cup Kraft Zesty Italian dressing
1/4 cup teriyaki sauce
1 tsp ginger

Cook pasta in large saucepan as directed on package, adding vegetables to the boiling water for the last 2 minutes of cooking time.

Meanwhile, heat oil in large nonstick skillet or wok. Add meat; cook until just browned on all sides. Stir in dressing, teriyaki sauce, and ginger; cook 2 minutes or until sauce is thickened, stirring occasionally.

Drain pasta and vegetable mixture; place in large serving bowl. Add meat mixture; toss until well coated. Sprinkle with dry roasted peanuts, if desired, and serve.

*Sirloin steak will be much easier to slice if slightly frozen.
